Brown Butter Banana Bread
One bowl, one loaf tin, and the bananas have to be genuinely black — not speckled, black. If they aren't there yet, wait a day.
Ingredients
- 115g butter
- 3 very ripe bananas
- 150g soft brown sugar
- 2 eggs
- 200g plain flour
- 1 tsp bicarbonate of soda
- Pinch of salt
- Handful of walnuts (optional)
Method
- Melt the butter in a small pan and keep cooking until it smells nutty and the milk solids are brown. Cool slightly.
- Mash the bananas in a large bowl, then beat in the sugar, eggs and brown butter.
- Fold in flour, bicarb and salt until just combined. Lumps are fine.
- Bake at 175°C for 55–60 minutes. A skewer should come out with crumbs, not batter.
